I started out doing tutorials specific for my game and it worked out to a certain level. The problem is that my game concept is pretty large. I wrote sections of it that will be used for the final project, but right now I am working on mostly level building which is pretty boring. Anyway, what I do now is just do a search on youtube for godot tutorials, click on filter and look through ones done in the last whatever month, year. Then just pick ones that look interesting even if they don't apply. They don't take that long, and until you are really grounded in Godot, you won't make the best decisions. Right now I'm working on a short project done with free assets, along with slowly working on my long term game. You'd be surprised at the things you pick up that apply.
