There is no way to make a game without coding. Unless you are just modding an existing game with new graphics, you will always need some custom logic, which means programming. It doesn't have to be text, there are also visual scripting languages, but you still need to understand logic, and control flow, and variables, and types, and all the same stuff you would need to code with text. Visual scripting can be easier at first, as it is harder to make mistakes, and common functions can come included. But it's still programming. It's like asking how you can write a book without typing. It can't be done.
That said, you might want to try GameMaker. It costs money, and it's not as flexible as Godot overall, but it would be easier for you. I'd still suggest you try to do some tutorials in Godot first to get an idea, but GameMaker is probably the easiest thing you could use (besides RPGMaker, which also might be an option for you).
