Is there a way to get the resulting mesh formed by a few CSG nodes?
Haven't tried but might the get_meshes() method of the CSGShape work?

Yes. by using a combiner:
func generating_meshes_for_mesh(csg:CSGCombiner): print("%s %s" % [csg.get_path(), csg.get_meshes().size() > 0])
